I’ve received a basket of Lemons from Amalfi…
What to do with them?
Mi hanno regalato una cassetta di limone di Amalfi…
che farne?
 
Oltre a tenerli come decorazioni in cucina (!!!) mi sono ingegnata per poterne approfittare al meglio…
I’ve made Lemon Muffin with Icing and Lemon Candied
Ho fatto dei classici muffin al limone con glassa profumata al limone e fetta di limone caramellato…
Flour/Farina 200gr
Milk/latte 140ml
1 Egg/uovo
50gr di Brown Sugar/zucchero di canna
40 gr di butter/burro
Juice / Succo di 1/2 limone
1 Tspn/cucchiaino di Yeast/lievito
A bit of Baking Soda/1 punta di bicarbonato
 
Mix the egg with butter, milk and the lemon juice. In another bowl mix the flour with the sugar, the yeast and the baking soda.
Mix together the two bowls and fill the muffin baking cups.
Cook for 25 minutes at 200°
Let them cool and then decorate them with the icing and a slice of candied lemon!
In una ciotola sbattete l’uovo con il burro fuso il latte ed il succo di limone. In un’altra setacciate la farina e unite lo zucchero, il lievito ed il bicarbonato.
Unite il contenuto delle due ciotole mescolate bene e riempite i pirottini per 3/4 della loro altezza.
Infornate e fate cuocere per 25 minuti a 200°
 
( questa ricetta è una delle ricette base dei muffin che uso, potete poi aggiungere la frutta, come ho fatto per preparare i Mini muffin alle fragole che abbiamo mangiato al Brunch)
 
Una volta cotti e fatti raffreddare decorateli con la glassa e le fette di limone caramellate con zucchero di canna.
 
For the firts time I’ve made also a Lemon Sorbet!
Per la prima volta poi ho fatto il Sorbetto al limone!

There are so many way to make Sorbet …
This is the recipe I’ve used.
Pour the water in a sauce pan, add the sugar (mixed with the carob flour in advance) and 2 lemon zest. When the water starts boiling, and the sugar is completely dissolved, remove the sauce pan from the fire and let it cool completely. Filter the syrup, add the lemon juice and then pour it in the ice – cream maker.
 
Ci sono tanti modi per fare il Sorbetto…questa è la ricetta che ho usato. 
Versate l’acqua in un pentolino, aggiungete lo zucchero ( a cui avrete aggiunto la carruba , un addensante) e la buccia di due limoni ( limoni devono essere Bio!!). Dovrete ottenere uno sciroppo.
Quando l’acqua inizia a bollire e lo zucchero è completamente sciolto, togliete il pentolino dal fuoco e fate raffreddare completamente. Filtrate lo sciroppo aggiungete il succo di limone e versate il composto nella gelatiera!
